Reconciliation is the only one that puts supply and demand on the same page. It asks one question: for each crop, is what I'll cut this week bigger or smaller than what I've already promised?
The arithmetic is deliberately plain — a subtraction you could do on the back of a seed packet:

Nothing here is estimated on your behalf. The tool supplies no yields, no prices and no assumptions — you supply both sides and it does the subtraction, crop by crop, so a shortfall in dahlias can't be hidden by a glut of zinnias in the same total.
Most growers do carry this sum in their head, but they carry it as one number: "I think I've got enough." That total is almost always fine, and it is almost always wrong. A week can be 400 stems up overall and still be 60 dahlias short for the Saturday wedding — and dahlias are the stems the bride is paying for. Reconciliation is only useful crop by crop. That is why this page makes you list them separately, and why the summary shows shortfall and surplus as two independent numbers instead of netting them into one.
Reconciliation is only as honest as the supply side. If you don't have a harvest record to read off, estimate it from plant counts and per-plant yields — our cut-flower yield per plant table gives stems-per-plant-per-season for 30+ crops, and the planting calculator runs the same numbers in the other direction. Plan to the low end of any yield range. A shortfall you predicted is a phone call; a shortfall you discover on harvest morning is a refund.
This is a five-minute habit, not a project. Run it once a week, before you confirm anything new — that's the whole discipline, and it's written out longhand here. The point of doing it on Sunday is that every option is still open. By Thursday, the only option left is apologising.
Stem reconciliation is comparing the stems you expect to cut in a given week against the stems you have already promised to customers — weddings, CSA shares, market, wholesale — one crop at a time, so you know your shortfall and your surplus before the week starts.
For each crop, add up every promise you have made for that week and subtract it from what you expect to cut. Any crop with a negative balance is overcommitted. Do it per crop, never as one total — a farm can be well ahead overall and still be short of the one flower a wedding was sold on.
Buy the shortfall in from a wholesaler or a neighbouring farm, substitute a crop you are long on after checking with the client, or move the delivery. Every one of those is straightforward a week out and painful two days out, which is the whole reason to run the numbers on Sunday.
Most growers plan to the low end of their yield range and keep 10 to 15 percent headroom on any crop carrying a wedding, because weather, pests and a hot week that opens everything early all cut supply and none of them give notice.
